A WELCOME FROM EDMUND

“It’s a new year, and already the snowdrops are blossoming, heralding the fresh turn of the seasons. It has been a hard few years for everyone the world over. Much of life has changed, and, like the snowdrops, we can see the positives shining through. Here is an overview of some of the excitements coming up:

  • Tanya and Peter have dozens of yoga retreats and events booked in.  

  • We are refreshing our online communications and website to keep you in the know.

  • Alex, our newest addition and talented chef, joins our ever-blossoming team.  

  • In the growing garden, Lucy is planting up this year’s crops for Alex to create delicious farm-to-fork food.

  • James in the garden is busy making many habitats for wildlife and sprucing the garden with new plants.  

  • And excitingly, our new library is opening soon, sustainably built and decorated with up-cycled materials.”

SEASONAL UPDATE

“It might only be February, but the windows are open, there’s a warm breeze, and the reassuring chirp of birdsong tells me Spring is around the corner. What an exciting chapter awaits us as we approach the warmer months. There’s real momentum in our sails as we start new collaborations and partnerships, which, added to our already strengthening team, will only enhance the guest experience here at West Lexham. To coincide, we look forward to a year without any dreaded restrictions. We now look to be finally free of Covid and the immense impact this has had on the wider Hospitality community and us.  We are definitely ready for 2023, so on behalf of myself and the team, we look forward to seeing you soon!”

“It’s only the start of 2023, and the bookings are coming in thick and fast! I am excited to see the range of possibilities the events at West Lexham may hold here this year. We have some really exciting clients with us on both yoga retreats and corporate events. We have also been lucky enough to start holding yoga teacher training here for the first time at West Lexham with one of our regular clients in the Orangery. Here’s to an exciting 2023!“

WHAT’S GROWING AT WEST LEXHAM

“Our kitchen garden was established in 2021 and is now looking well established. We have our cordon-trained apple and pear trees around the perimeter. Also, our amazing fruit cage was filled last year with raspberries, gooseberries and a range of currants. We will be filling up the cut flower spiral again this year, which was a great addition to the garden, providing us with some beautiful blooms for the bedrooms, communal spaces and the Café and creating an excellent space to help our birds, bees and insects thrive. We are also still filling our polytunnels with a range of tomatoes, aubergines, peppers and infamous watermelons.

The outdoor beds will once again feature a plethora of vegetables, from potatoes to the more unusual apple marigold and Chinese artichokes. With our new partnership with Alex and Gemma, heading up The Garden Kitchen, we can supply them with farm to fork food for beautiful seasonal dishes that will nourish all those visiting us. Lastly, keep an eye on our socials for photos and videos with advice and tips to help you and your growing season so you can get growing with West Lexham.“

“With a firm focus on skilfully prepared, delicious food, seasonal and local where possible. We favour simplicity and flavour, allowing the quality of the ingredients to be at the forefront of all our dishes. We are delighted to be working at West Lexham and excited by incorporating the Growing garden and creating exciting plates of expertly grown farm-to-fork food. We both look forward to 2023 and working with everyone at West Lexham.“
