It’s finally December which means winter has officially arrived! For those of you who are lovers of every season, we’re rejoicing in the crisp frosts and promises of snow along with you! And for those of you who prefer the warmer months, don’t worry; spring will be here again before you know it.

There’s so much to love about Winter though and when you’re lucky enough to work somewhere as beautiful as West Lexham, as we are, you truly get to see the beauty of it. We’ve been keeping you all updated on our Instagram as the leaves have changed and Jack Frost has worked his magic. There’s been many an early morning mist, frosty foliage, and throwbacks to a snow-covered site. We’re lucky enough to have experienced winter in all its forms, the rainy, the snowy and the frozen! Every single one has its own unique beauty and West Lexham makes the perfect canvas.

 

 

This winter we’re focusing on the details and showcasing what we have that is truly incredible. Currently, Lucy and Chelsie, our growing team are hard at work (as always!) and Lucy gave us some insight on what’s been happening recently:

‘The Kitchen Garden has slowed down, and the buzz of the summer has gone for now but there is still plenty to do.

We are still harvesting some produce including salad leaves, Kale, leeks, celeriac, and Chinese artichokes. Crops such as garlic, spring cabbage and broad beans have recently been planted and will grow over winter, ready to be harvested early 2020. Another important winter job is clearing finished crops and adding a layer of compost to the no-dig beds and aerating with the broad fork in preparation for next year. A seed order will be placed soon with some new varieties to trial (top secret: more info coming soon!).

An exciting new edition is underway in the form of spiral cut flower garden which will add to the supply of flowers available for decorating the accommodation around site and, maybe more importantly, help create even more biodiversity within the garden to attract beneficial insects.’

 

 

 

As you can tell, there’s never a quiet moment in the growing gardens and our team can’t wait to see what spring will bring! We’ve got so many exciting things coming in 2022, including the completion of our library.
